Thyme & Peppercorn Goat Cheese with Lemon Oil Drizzle

This simple, elegant appetizer brings bright citrus and warm peppery notes to creamy goat cheese. A good-quality olive oil and freshly cracked peppercorns make a noticeable difference, while fresh thyme adds an aromatic, savory finish. Serve with sliced or toasted baguette for an easy starter or party plate.

Ingredients:

  • 1 (5.5-ounce) log soft mild goat cheese
  • 1 teaspoon pink peppercorns or peppercorn mélange, cracked
  • 1 tablespoon fresh thyme leaves
  • 3 tablespoons extra-virgin olive oil
  • 1 teaspoon grated lemon peel
  • ½ small garlic clove, pressed (optional)
  • Sliced baguette, toasted or fresh, for serving

Instructions:

  1. Place the goat cheese on a plate. Using a piece of plastic wrap to help shape it, form the cheese into a 5-inch round.
  2. Sprinkle the cracked peppercorns and thyme evenly over the surface of the cheese, pressing gently so the herbs and pepper adhere.
  3. In a small bowl, whisk together the extra-virgin olive oil, grated lemon peel, and the pressed garlic if you choose to use it.
  4. Pour the lemon oil mixture over the cheese, letting a little pool around the base for dipping.
  5. Serve immediately with sliced or toasted baguette so guests can spread the cheese and enjoy the contrasting textures and flavors.

Notes:

  • Cracking whole peppercorns at the last minute preserves their aroma. A peppercorn mélange or pink peppercorns both work well.
  • Choose a bright, fruity extra-virgin olive oil to complement the lemon and herbs.
  • If you prefer a milder garlic flavor, omit the garlic or use just a light press.
