A simple dump-and-go crockpot meal the whole family will enjoy. This Crockpot Ranch Chicken Dinner combines chicken, potatoes, and green beans into one flavorful, fuss-free dish. It can easily be made gluten-free and dairy-free.
When evenings are busy, I rely on recipes that require almost no hands-on time. This crockpot dinner is exactly that: add the ingredients, set the cooker, and come back to a complete meal. The chicken stays tender while the potatoes soak up the ranch flavor and the green beans add color and texture.
You can adapt the recipe to suit dietary needs—gluten-free and dairy-free options are simple to implement by choosing compatible seasoning mixes or making your own. It’s become one of my go-to meals for hectic weeks because it’s easy to prepare and my kids always finish their plates.
I used two large chicken breasts (about 1 1/2 lb total). If your breasts are smaller, use four. I quartered 5 russet potatoes and added two drained cans of green beans. For seasoning I sprinkled the equivalent of one packet of ranch dressing mix over everything. I often make my own ranch seasoning, which works great here. To finish, I scattered chopped bacon on top for extra flavor.
Cook on high for 4–5 hours or on low for about 8 hours. My crockpot is 6 quarts, so adjust cook time slightly if your slow cooker is much smaller or larger.
