This week on Gigi Day my grandson and I made a batch of breakfast pigs in a blanket.
We like to cook a meal for my daughter after she’s worked all day, and he calls our special time together “Gigi Day.”
Breakfast for dinner is always a win — and this version uses just four simple ingredients.

How to make breakfast pigs in a blanket
You can use pre-cooked sausage links or cook them yourself — I used the air fryer, but a skillet works fine. While the links cooled, I scrambled some eggs and set up a simple assembly station.

My son joined us that evening and helped my grandson roll out the cinnamon rolls. It made the process fun and easy.

Once the sausage and eggs were cooled, the boys started assembling the roll-ups. Begin with a spoonful of scrambled eggs, add a sausage link, and sprinkle with shredded cheese.

Fold the cinnamon roll dough around the filling and secure it with a toothpick. My grandson was proud to make the first one for his mommy.

Place each assembled pig in a blanket on a parchment-lined baking sheet.
Bake at 375°F for 14–16 minutes, then allow them to cool for a few minutes so the icing won’t run off.


Drizzle the icing packet from the cinnamon rolls over the pigs in a blanket before serving

It was a sticky, satisfying dinner — finger-licking good.

Breakfast Pigs in a Blanket
Breakfast pigs in a blanket are a fun, kid-friendly meal — cinnamon rolls filled with eggs, sausage, and cheese. Great for breakfast or dinner.

Ingredients
- 3 eggs beaten
- kosher salt, pepper
- 1/2 Tbsp butter
- 1 tube cinnamon rolls (8-pack)
- 8 breakfast sausage links cooked
- 3/4 cup shredded cheese
Instructions

Crack the eggs into a bowl, season with kosher salt and pepper, and beat with a fork. Heat a skillet over medium-low, add the butter, then the eggs. Scramble for 4–5 minutes until set, then remove and set aside.

Remove the cinnamon roll dough from the package and use a rolling pin to flatten each roll.

Place some scrambled eggs, a cooked sausage link, and a sprinkle of cheese in the center of each flattened roll.

Fold the dough over the filling, secure with a toothpick, and arrange on a lined baking sheet.

Bake at 375°F for 14–16 minutes. Let cool for several minutes, then drizzle the icing that came with the cinnamon rolls over the top and serve. If your icing is in a cup, remove the metal lid and microwave for a few seconds to make it easier to drizzle.
