Ingredients

  • Cauliflower – 1 medium-sized head
  • Ghee – 2 tbsp (substitute avocado oil or coconut oil if preferred)
  • Onion – 1, finely chopped
  • Green chilies – 2, finely chopped (adjust to taste)
  • Cabbage – 1/4 cup, finely sliced
  • Carrot – 1, shredded
  • Capsicum (bell pepper) – 1, shredded
  • Salt – to taste
  • Black pepper – to taste
  • Vinegar – 1 tsp
  • Green chilly sauce – 1 tbsp (homemade or preferred spicy condiment)
  • Ginger – a small piece, julienned
  • Coriander leaves (cilantro) – 2 tbsp, chopped for garnish

Instructions

  1. Wash and trim the cauliflower. Break into florets and pulse in a food processor until the pieces resemble rice grains. Avoid over-processing into a paste.
  2. Heat ghee in a large pan over medium heat. Add the chopped onion and sauté until it turns golden and translucent.
  3. Add the julienned ginger, sliced cabbage, shredded carrot and shredded capsicum. Sauté on low to medium heat until the vegetables are slightly tender but still retain some bite.

  6. Cover the pan and cook for 2–3 minutes, stirring once or twice, until the cauliflower is just tender. Avoid overcooking to preserve texture and nutrients.
