Ingredients

  • 1
    (9 oz.) box
    Nabisco Famous Chocolate Wafers
  • 1
    container
    Breyers Vanilla Bean light ice cream
    (1/2 fat) or any reduced-fat vanilla ice cream
  • ½
    cup
    crushed red-and-white-striped candy canes

Instructions

  1. Soften the ice cream slightly, if needed, until it’s easy to scoop.
  2. Place about 2 tablespoons of softened ice cream on one wafer. Top with a second wafer and press gently so the ice cream spreads without cracking the wafers. Smooth the sides with a knife.
  3. Press some crushed candy canes around the sides of each ice cream sandwich, then transfer the bite to a baking sheet or tray lined for the freezer.
  4. Repeat to make as many bites as you like and arrange them on the tray so they aren’t touching.
  5. Freeze for at least two hours or until firm. When set, wrap each bite in plastic wrap and store in the freezer.
  6. These peppermint ice cream bites can be prepared several days in advance for easy serving.
