Easy low carb chicken, broccoli, and cheddar skillet — a quick, satisfying dinner that combines protein and vegetables in one pan. This simple recipe brings together the classic flavors of broccoli and cheddar with tender shredded rotisserie chicken and a bit of broth for added richness and protein.

Using rotisserie chicken keeps the prep time minimal, so you can have a nourishing meal on the table fast. Bone broth adds depth, but you can substitute regular chicken broth if needed. The result is a cozy, flavorful skillet that’s great for weeknights, meal prep, or anyone watching carbs without sacrificing comfort.

Can I make this dairy free?

Yes. Replace the butter with vegan butter or olive oil and use your favorite meltable dairy-free cheese. This version remains naturally gluten free, grain free, soy free, and nut free unless you add other ingredients.

Description

Easy low carb broccoli, chicken, and cheese skillet — a one-pan meal that’s both comforting and quick to prepare.

Ingredients

Scale
  • 2 tbsp unsalted butter
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 head broccoli, cut into florets
  • 1 rotisserie chicken, shredded
  • 3/4 cup bone broth (or regular chicken broth)
  • 1 + 1/2 cup shredded cheddar
  • Salt and pepper, to taste
  • Optional: red pepper flakes for a bit of heat

Instructions

  1. Heat a large skillet with high sides and a lid over medium heat.
  2. Melt the butter, then add the diced onion and minced garlic. Sauté for about 4 minutes until the onion is softened and fragrant.
  3. Add the broccoli and pour in the broth. Stir in the shredded chicken and season generously with salt and pepper. If you like heat, add red pepper flakes. Reduce the heat slightly, cover, and let cook for 10–12 minutes until the broccoli is tender to your liking.
  4. Sprinkle the shredded cheddar over the skillet, replace the lid until the cheese melts, then serve hot. Enjoy!
