Bowtie Chicken Caesar Salad – This pregnancy has me craving sugar like never before, and it’s been a struggle to keep meals balanced. With my previous pregnancies I didn’t crave sweets nearly as much, but right now anything a little sweet is irresistible. To counteract that, I’m trying to work in as many salads and vegetables as possible so I can at least say I offered the baby some greens.

How to Make This Bowtie Chicken Caesar Salad
I’ve made this bowtie chicken Caesar salad for years, and it’s always a hit at gatherings. It’s essentially a classic chicken Caesar salad with the addition of cooked bowtie pasta, sweet grape tomatoes, toasted slivered almonds and a squeeze of fresh lemon for brightness. The pasta and chicken make it substantial enough to serve as a main course while still leaving room for a dessert if you’re so inclined. Any cooked chicken breast works here, but I like using grilled chicken seasoned with Montreal-style seasoning for extra flavor.

For the dressing, choose your favorite Caesar. Homemade dressing is wonderful, but there are several quality store-bought options that work well and save time. Use enough to coat the salad lightly so all ingredients marry without getting soggy.

Ingredients
- 2 cooked chicken breasts sliced
- ½ lb cooked bowtie pasta
- 1 large head romaine lettuce washed, dried and chopped
- 3 scallions finely chopped
- 4 oz grape tomatoes halved
- ½ C parmesan cheese shredded
- ½ C slivered almonds toasted
- croutons Caesar dressing, lemon wedges
Instructions

Toss all ingredients in a large bowl, dress with Caesar dressing to taste, and serve with lemon wedges so each person can add a squeeze of fresh lemon.
