Grilled salmon on a cedar plank is an elegant yet easy dinner that’s perfect for weeknights or special occasions. Living in the PNW I’m lucky to catch fresh salmon, but store-bought or shipped fillets work just as well. Most fillets arrive skin-on and deboned. Salmon is a nutritious choice, rich in protein, B vitamins (B3, B5, B6, B12), vitamin D and E, and selenium.

If you buy frozen fillets, thaw them fully before cooking. Fresh or thawed salmon benefits from simple seasoning and a brief time on a soaked cedar plank to add smoky aroma and keep the fish moist.
Cedar Plank Grilled Salmon Ingredients
- Salmon fillet – fresh, previously frozen, or store-bought (skin on is fine).
- Salmon rub – use your favorite rub or a premade salmon seasoning for convenience.
- Olive oil – a light coating to help the seasoning stick.
- Fresh lemons – sliced into wedges or rounds for topping.

How To Use Cedar Planks
Soak cedar planks for one to two hours before grilling. The moisture prevents the wood from burning and releases steam that helps keep the salmon tender.

After soaking, lift the plank from the water and set it on a towel for a few minutes before placing the fish on it.
How to Grill Salmon on a Wood Plank
Prepare the salmon: Defrost if frozen, or rinse and pat fresh fillets dry. Trim as needed.
Slice the lemons: Small wedges or rounds both work; place them on the fillet for flavor and presentation.

Oil the fillet: Lightly coat both skin and flesh with olive oil so seasoning adheres easily.
Place skin-side down on the cedar plank.
Season: Sprinkle your salmon rub evenly. I used a smoky salmon rub but any seasoning you like will work.

Add lemon slices: Space wedges or rounds across the fillet for added brightness while cooking.
Heat your grill to medium-low. This gentler temperature helps cook the salmon evenly without charring the plank.

Grill the plank: Place the cedar plank on the grill racks (upper or lower rack is fine). Cook until the salmon reaches an internal temperature of 145°F (63°C) in the thickest part.
Tip: Keep an eye on the plank and fish as plank edges may char slightly. If you’re preparing sides, position the plank where it’s convenient to monitor.

Check doneness: Use a meat thermometer and remove when the internal temperature reaches 145°F. Cooking times vary by grill and fillet thickness, but plan for roughly 15–25 minutes on medium-low heat.

Can Cedar Planks Be Reused
You can gently scrape and rinse a cedar plank and reuse it if it isn’t heavily charred. Avoid soap when rinsing. If the plank shows significant charring or has been left damp for long periods, it’s safer to replace it to avoid mold or off flavors.

How to Store Leftover Salmon
Store leftover salmon in an airtight container or sealed bag in the refrigerator for up to three days. For longer storage, wrap portions tightly and freeze for up to three months. Vacuum sealing or using freezer-quality containers will preserve texture and flavor best.
Helpful tools for storage include a food sealer, airtight containers, freezer bags, and a food scale for dividing portions before freezing.
What To Serve With Cedar Plank Salmon
Pair cedar plank salmon with simple sides: cheesy grilled asparagus, grilled corn, white rice, mashed potatoes, or a crisp coleslaw. Smoked appetizers and sides also complement the plank’s smoky notes.
