Pecan Squares finished bars

Pecan Squares

Ingredients

For the crust:
  • 3 cups all-purpose flour
  • 1/2 cup sugar
  • 1 cup butter, softened
  • 1/2 teaspoon salt
For the pecan filling:
  • 4 eggs
  • 1 1/2 cups light or dark corn syrup
  • 1 1/2 cups granulated sugar
  • 3 tablespoons butter, melted
  • 1 1/2 teaspoons vanilla extract
  • 2 1/2 cups chopped pecans
For chocolate drizzle (optional):
  • 1/2 cup semi-sweet chocolate chips, melted for drizzling

Instructions

  1. Preheat oven to 350°F (175°C).
  2. To make the crust: In a large bowl, combine the flour, sugar, softened butter, and salt. Mix until the mixture resembles coarse crumbs. Press the crumbs firmly and evenly into a greased 15 x 10 x 1-inch baking pan. Bake for 20 minutes, then remove from the oven.
  3. While the crust bakes, prepare the pecan filling: In a large bowl, whisk together the eggs, corn syrup, granulated sugar, melted butter, and vanilla until well combined. Stir in the chopped pecans.
  4. Spread the pecan filling evenly over the hot baked crust. Return the pan to the oven and bake at 350°F for 25 minutes, or until the center is set. Remove from oven and cool on a wire rack.
  5. If desired, drizzle melted semi-sweet chocolate over the cooled bars. Once completely cooled, cut into 48 squares and serve.

Notes
