- 2 C All-Purpose Gluten-Free Flour
- 1 1/2 tsp xanthan gum
- 4 tsp baking powder
- 1/2 tsp fine sea salt
- 1/2 C granulated sugar
- 1 C milk, room temperature
- 2 eggs, beaten, room temperature
- 1/4 C canola oil
- 1 tsp vanilla extract
- 1 tsp almond extract
- 1 C blueberries (fresh or frozen)
- Topping:
- 1/2 C sliced almonds
- 1 Tbsp granulated sugar
- 1/2 tsp cinnamon
Instructions
- Preheat the oven to 400°F (200°C).
- Lightly spray a 12-cup muffin tin or line with paper liners.
- Mix the cinnamon and sugar for the topping in a small bowl and set aside.
- In a large bowl, sift or whisk together the gluten-free flour, xanthan gum, baking powder, salt, and 1/2 cup sugar until evenly combined.
- In a separate bowl or large measuring cup, whisk together the milk, beaten eggs, canola oil, vanilla extract, and almond extract.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.
