Why Black folks cook it this way

Flavor and practicality have always gone hand in hand. African American cooks developed slow-simmered greens and beans long before pressure cookers existed, layering broth, fat, herbs, and care to build richness. The Instant Pot simply shortens the time required—never the seasoning. We still rely on stock, butter or a butter alternative, fresh aromatics, and time-earned techniques to create depth.

Why pressure cook green beans?

Pressure cooking locks in taste, tenderness, and nutrients while drastically cutting cook time. Traditionally, soul food green beans simmer with smoked meat or rich broth until they’re deeply savory and very soft. The Instant Pot reproduces that slow-simmered profile in minutes by forcing the flavors together under steam and pressure.

How long do green beans take to cook in a pressure cooker?

Fresh or frozen green beans cook incredibly fast in an Instant Pot—about 2 minutes on high pressure. For frozen beans you’ll get the same results with the same timing. Canned green beans, already cooked, don’t benefit from pressure cooking; instead, warm them gently with the seasonings to meld flavors.

Note: Allow a short natural pressure release after cooking. Letting the pressure ease naturally for a couple of minutes helps the beans finish tendering and absorb the seasoned broth for better texture and flavor.

Ingredients

This recipe centers on fresh or frozen green beans simmered in a savory, seasoned base. The short ingredient list focuses on quality and layering: chicken stock for depth (or vegetable broth for a vegetarian version), butter or a substitute for richness, scallions for a mild onion note, thyme for herbal warmth, garlic powder, and salt and pepper to taste. These simple elements combine to create a pot liquor that tastes like it has been simmering all day.

How to cook Southern green beans in the Instant Pot

To make these Instant Pot green beans, combine the beans, chicken stock, butter, scallions, thyme, and seasonings in the pot. Seal and pressure cook on high for 2 minutes, then allow a natural pressure release for about 2 minutes before opening. The result is tender, well-seasoned green beans that taste like they simmered for hours but are done in a flash.

Make-It-Your-Way

If you prefer the longer, reduced broth and pot-liquor intensity of the stovetop method, simmer the beans gently until the broth reduces to your liking. The Instant Pot saves time; the stovetop deepens reduction—both honor the same flavors.

Common side dishes served with green beans

Green beans pair beautifully with classic Southern sides: baked macaroni and cheese, candied yams, roasted or oven-baked meatloaf, cornbread, and collard greens. Using the Instant Pot for your beans frees up the stovetop and oven so you can prepare other parts of your meal with ease.

  5. Serve the green beans hot, spooning the seasoned broth over them. Adjust seasoning as needed and enjoy.

These measurements and timing were tested in a home kitchen to produce a reliably tender result. Swap the chicken stock and butter for plant-based substitutes to keep the same soul-food flavor while making the dish vegetarian or vegan.
