Things are slowly returning to normal—so are my meals and my runs.
With colder weather finally settling into Alabama, I wanted something warm and filling. I gathered whatever vegetables I had on hand and made a hearty soup. The result: vegetable soup with beans, peas, squash, potatoes, the trinity, and a bit of beef steak. It warmed me up from the inside out. I served it with my go-to crackers—Kashi—for some satisfying crunch.
