Ingredients

  • 500 gms Bone-in chicken pieces cut into ½” pieces (or boneless)
  • 1 tsp Black peppercorns
  • 1 tbsp Whole coriander seeds
  • ⅓ + ⅓ cups Cilantro/coriander leaves (divided)
  • 1 Whole green chili (adjust to taste)
  • 2 tbsp Ginger julienne

Instructions

  • Grind peppercorns, coriander seeds, ⅓ cup cilantro and the green chili in a mortar and pestle or pulse briefly in a mixer—leave some texture. Set aside.
  • In a bowl, combine chicken pieces with the ground masala, ginger julienne and sliced onions. Mix to coat and rest 10 minutes if desired.
  • Add the remaining ⅓ cup cilantro, turmeric, lemon juice and salt. Mix well.
  • Add besan gradually along with spoonfuls of water and stir until the chicken is evenly coated with a thick batter. Set aside.
  • Coat the air fryer basket with a light spray of oil. Arrange chicken pieces in a single layer without overcrowding.
  • Spray the coated pieces lightly with oil and place the basket in the air fryer.
  • Set the air fryer to AIR FRY at 350°F for 6 minutes. Start the cycle.
  • When it beeps after 6 minutes, remove the basket carefully, flip the pieces and air fry for another 3 minutes at the same settings.
  • If you need to check midway, press PAUSE and open the basket; the fryer will resume when you return the basket.
  • Serve hot with chutney and enjoy.

Notes

  1. Bone-in or boneless chicken both work; choose based on preference.
  2. Do not overcrowd the air fryer; cook in batches if necessary.
  3. Adjust chilies or pepper to change spice level.
  4. For crispier pakoras, add 1–2 tsp rice flour to the batter and a little more water if needed.
  5. Always aim for a thick batter that clings to the chicken.
