This Vegan Sausage Sheetpan Meal brings together sweet potatoes, kale, and mushrooms for a hearty, well-rounded dinner. It requires minimal prep, uses just one pan, and finishes in under 30 minutes.

I don’t usually make many sheet-pan meals because most haven’t felt like a great time-saver for me. This one, though, is an exception. Many recipes use traditional sausage, so veganizing it is as simple as swapping in vegan sausages. If you prefer meat, you can substitute your favorite sausage just the same. It’s an easy, flexible approach that works either way.

For this dish I tossed winter vegetables with olive oil and seasonings, added sausages, and roasted everything on one sheet. Bake for about 25 minutes until the sweet potatoes are tender and the sausages are cooked through. While it roasts, cook some quinoa or brown rice as a side and you’ll have a complete meal. This sheetpan dinner is perfect for weeknight cooking and excellent for meal prep.
There’s a misconception that vegan meals lack protein. These store-bought vegan sausages can be surprisingly high in protein — some brands list as much as 30 grams per sausage — often more than a typical pork or Italian link. Ingredients
- 4 Italian sausages (use your favorite vegan, vegetarian, or meat sausages)
- 1 large sweet potato, cut into small cubes (about 2 cups)
- 2 cups chopped kale
- 1 cup halved mushrooms
- 1–2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon Italian seasoning
Instructions
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with foil. Spread the sweet potato, kale, and mushrooms on the sheet. Drizzle with olive oil and sprinkle with salt and Italian seasoning; toss to coat evenly.
- Arrange the sausages on the pan with the vegetables. Bake for 20–25 minutes, until the sweet potatoes are tender and the sausages are heated through, turning the sausages once if desired for even browning.
- Serve immediately, paired with quinoa or brown rice if you like.
