Ingredients
-
1
(9 oz.) box
Nabisco Famous Chocolate Wafers -
1
container
Breyers Vanilla Bean light ice cream
(1/2 fat) or any reduced-fat vanilla ice cream -
½
cup
crushed red-and-white-striped candy canes
Instructions
-
Soften the ice cream slightly, if needed, until it’s easy to scoop.
-
Place about 2 tablespoons of softened ice cream on one wafer. Top with a second wafer and press gently so the ice cream spreads without cracking the wafers. Smooth the sides with a knife.
-
Press some crushed candy canes around the sides of each ice cream sandwich, then transfer the bite to a baking sheet or tray lined for the freezer.
-
Repeat to make as many bites as you like and arrange them on the tray so they aren’t touching.
-
Freeze for at least two hours or until firm. When set, wrap each bite in plastic wrap and store in the freezer.
-
These peppermint ice cream bites can be prepared several days in advance for easy serving.
