Active Starter vs Sourdough Discard?
An active starter is one that has been fed and doubled in size — typically 6–8 hours after feeding. Once it peaks and falls, it’s no longer active.
Unfed or inactive starter is commonly called sourdough discard. Despite the name, discard is still a living culture and can be put to good use in many recipes.

What Can I Make With Sourdough Discard?
Sourdough discard works well anywhere a leavening agent is needed. It can contribute lift and flavor similar to baking soda, baking powder, or instant yeast in many quick breads and baked goods.
Use discard in pancakes, cookies, muffins, scones, crackers, waffles, naan, banana bread, cornbread and more. The list is long — and many recipes simply swap some of the liquid or flour for discard to add structure and a pleasant tang.
